Choux pastry is a basic dough of French origin and is made with just a few simple ingredients: water, flour, butter, and eggs. This dough requires double cooking, first in a pot and then in the oven.
This dough is also called cream puff pastry and is used in bakeries to make savory or sweet items.
I love watching them bake in the oven as they puff up and leave a small cavity inside, ready to be filled with custard, cream, or chocolate. However, if you want, you can also make the savory version and fill it with cold cuts, cheese, or savory mousse.

Choux Pastry Ingredients
- 3 eggs
- 125 ml water
- 90 g butter
- 125 g all-purpose flour
- 1 pinch salt

Choux Pastry Steps
Preparing choux pastry is really simple and not as complicated as it might seem. Take a heavy-bottomed pot, put the water, butter, and a pinch of salt and bring to a boil.
Remove the pot from the heat, add the flour and stir. Put the mixture back on the heat and continue to stir until it detaches from the sides, turn off the heat and let it cool slightly. With the help of a stand mixer or a simple blender, add one egg at a time, allowing it to incorporate well before adding the next egg.
Work the mixture until all the ingredients are well combined. Put the choux pastry in a piping bag with a large star tip and form circles on a greased baking tray.
Bake in a preheated ventilated oven at 392°F (200°C) and cook for 15 minutes. Then lower the oven temperature to 356°F (180°C) and cook for another 8 minutes. Once cooked, leave the choux pastry in the turned-off oven for another 10 minutes. Open the door and place a wooden spoon in the closure. This way the doughnuts will dry out a bit and won’t deflate.
And here they are, ready, nice and puffy!
