Eggplant Boats

Today I’m sharing my recipe for eggplant boats, a simple and quick side dish.

During this beautiful time of year, we can make many recipes with eggplants. This time, I wanted to make this one, a perfect dish that solves your dinner in a few minutes.

Also, this side dish is quite suitable for those on a diet, you can eat plenty of it.

The preparation involves baking, it may be hot, but it’s worth it!!

Ingredients

  • 4 eggplants (long)
  • 10 cherry tomatoes
  • extra virgin olive oil
  • 1 clove garlic
  • salt
  • basil

Tools

  • 1 Knife
  • 1 Cutting board

Steps for Eggplant Boats

  • First, wash the eggplants and dry them well. Use a knife to score the inside of the eggplants with diagonal cuts to facilitate cooking. Add some salt and let them sit for half an hour. Meanwhile, chop the cherry tomatoes and garlic into small pieces.

    Take the eggplants again and insert the cherry tomatoes, garlic, and basil into the cuts. Take a baking tray, drizzle some oil, and place the eggplants close together. Bake in a fan oven for 20 minutes at 320°F (160°C).

  • They are excellent both hot and cold!

They can be stored in the fridge for two days. If you like, you can add a bit of melting cheese.
