Preparing this recipe is really simple; we need a few ingredients, a pinch of imagination, and the aroma of the oven spreading throughout the house. The pumpkin should be cut into pieces, seasoned with breadcrumbs, chives, salt, and rosemary. Ingredients for preparing gratinated pumpkin
- 0.88 lbs pumpkin
- 6 tablespoons breadcrumbs
- to taste chives
- to taste salt
- to taste rosemary
- to taste extra virgin olive oil

Steps for gratinated pumpkin
First, clean the pumpkin well, removing the skin and internal seeds. Once cleaned, cut it into small pieces, trying to keep them more or less the same size, so they cook evenly.
Season the pumpkin with breadcrumbs and chives.
Add the extra virgin olive oil and salt. Mix everything well with your hands or a spoon, so that each piece of pumpkin is well coated with the aromatic mix.
At this point, take a baking tray, pour a drizzle of oil on the bottom and spread it well with a kitchen brush. Arrange the pumpkin without overlapping it, so it doesn’t stick and remains crispy and tender inside. Bake at 340°F for 15 minutes, checking the cooking from time to time. Every oven is different, so if you see that the pumpkin tends to soften too much, you can turn on the grill to achieve a perfect gratin. When it’s ready, take out the tray and let the pumpkin rest for a few minutes.

Let the pumpkin cool completely, then transfer it to an airtight container or cover it well with plastic wrap. It keeps in the fridge for two days.
