Today I share my milk-leavened dough recipe: a versatile and incredibly soft base, perfect for creating a wide range of preparations, from savory Danubio to the savory Colomba, to the most fragrant buns. Ingredients to prepare milk-leavened dough

  • 4 1/2 cups all-purpose flour
  • 1 cup milk (about 8.5 fl oz)
  • 1 egg
  • 1 teaspoon sugar
  • 1 2/3 tsp salt
  • 3 1/3 tbsp vegetable oil

Steps to prepare milk-leavened dough

  • In a small bowl, dissolve the fresh baker’s yeast in lukewarm milk. Mix well and set aside.
    In a large bowl, pour the flour and add the lukewarm milk with the yeast. Add a teaspoon of sugar and the vegetable oil.

  • Stir lightly, add the salt and the egg. Work the mixture with a fork for a few minutes.

  • If you can’t work the dough well with a fork, knead it with a stand mixer or simply with your hands as I did. Cover the bowl with a kitchen towel and let it rise in a warm place for at least 3 hours, or until it has doubled in volume. Rising times may vary depending on the ambient temperature.

    With this dough you can prepare many filled and unfilled recipes.

    Allow the recipe you prepare to rise again for about an hour in a warm place, or until the dough reaches the edge of the pan.
    Preheat the fan oven to 356°F. Brush the surface gently with beaten egg and bake for about 30 minutes, or until the surface is well golden. If the surface starts to darken too quickly, cover it with parchment paper.
