Pasta and Fava Beans

Today I present you with a very simple recipe: pasta with fava beans, a delicious and creamy dish.

Fava beans are always present on our tables at this time of year, and we have countless ways to cook them or simply eat them raw. This legume, which has many beneficial effects on our body, pairs perfectly with a type of short and ridged pasta. However, as a rule, it must first be sautéed with onions in a pan: this is the main rule for obtaining a truly tasty and fragrant dish.

Preparing pasta and fava beans is really simple: after cleaning them, they should be cooked with the onion in a drizzle of oil. Cook the pasta in salted water, drain a couple of minutes before it’s ready, and add it to the cooked fava beans. Stir for a few minutes, adding a nice grated Parmesan cheese, mix and serve.

Ingredients for Pasta and Fava Beans

  • 14 oz pasta (ditalini)
  • 7 oz fava beans
  • 1 white onion
  • 2 tbsps extra virgin olive oil
  • salt
  • 3 tbsps grated Parmesan cheese

Steps for Pasta and Fava Beans

  • First, clean the onion and chop it into small pieces.

    Carefully remove the outer shell of the fava beans, cut the pod and the top part.

    In a pan, add a drizzle of oil and sauté the onion for a few minutes without letting it burn. Add the fava beans and let them cook for about ten minutes.

  • In a separate pot with salted water, cook the pasta. Drain the pasta a couple of minutes early directly into the pan with fava beans and onion.

  • Add some grated Parmesan cheese and stir for a few seconds.

    All that’s left is to plate and serve.
