Potato Fritters

Potato fritters are delicious bites very similar to the classic Neapolitan crocchè that you can use as an appetizer, aperitif, or side dish. Inside they have potatoes, parsley, pepper, and Parmesan: this mixture is then closed in the shape of a fritter and coated in a thin and light breading. You could even fill them with some cured meats or cheese to make them even more delicious. These fritters require very little time and ease of preparation, so they are really within everyone’s reach.

Potato Fritters Ingredients

  • 2 eggs
  • 1 lbs potatoes
  • 3 1/2 oz grated Parmesan
  • 1 cup all-purpose flour
  • salt
  • pepper
  • 1 3/4 oz breadcrumbs
  • parsley

Potato Fritters Steps

  • First, wash the potatoes well, place them in a pot with salted water, and boil them.

    When they are cooked, peel them and pass them through a potato masher.

    In a bowl, add the mashed potatoes, grated Parmesan, eggs, flour, pepper, parsley, and salt.

  • Mix everything with a simple fork. In a small pot with high edges, heat the oil.

    Take some mixture, shape it in your hands, and form fritters.

  • Fry in hot oil, a couple at a time. When the fritters are golden, drain them on frying or kitchen paper to remove excess oil.
