Ingredients

  • 3 cups all-purpose flour
  • 1.25 cups powdered sugar
  • 1 egg
  • 1 egg yolk
  • 10.5 tbsp butter
  • 1 packet vanillin
  • 1 pinch salt
  • 1 tsp baking powder

  • In a large bowl, place the flour, powdered sugar, packet of vanillin, and cold butter.

  • Add the teaspoon of baking powder and the eggs.

  • Add a pinch of salt and work the mixture with your hands until it becomes sandy in texture.

  • Preheat the convection oven to 356°F (180°C). In the meantime, prepare the filling. In a bowl, combine powdered sugar, ricotta, and chocolate chips. Mix everything with a fork until you get a smooth, lump-free cream.

  • Take a round mold 8.5-9.5 inches in diameter, butter and flour it well, or use a sheet of parchment paper. Pour half of the dough on the bottom until it is fully covered and press it down with your hands.

    Place all the ricotta and chocolate cream, then add the remaining dough over the entire surface of the cake.

  • Bake in the oven for about 35 minutes. Let it cool completely and serve with a dusting of powdered sugar.
