Sautéed Radicchio

Sautéed radicchio is a simple and quick recipe to prepare with both long Treviso radicchio and round radicchio. In both cases, you just need to clean the radicchio, slice it into strips, and sauté it in a pan with oil, onion, and salt. At the end, you can add a bit of balsamic glaze to make it tastier. In just a few minutes, your side dish will be ready!

Stir-fried radicchio is also an excellent recipe for those following a dietary regimen. Its significant nutritional properties and low-calorie content (only 16 kcal per 100g) make it absolutely light! The ideal way is to eat it raw or roasted to preserve its properties, and it’s important not to let it burn during cooking.

Ingredients for Sautéed Radicchio

  • 1 Treviso IGP red radicchio, late variety
  • 1 white onion (small)
  • salt
  • extra virgin olive oil
  • balsamic glaze

  • 1 Cast Iron Skillet
  • 1 Knife

Steps for Sautéed Radicchio

  • First, clean the radicchio by removing the outer leaves. With a knife, slice the radicchio into strips as shown in the picture.

  • On a cutting board, clean and mince the onion. Take a pan, pour a drizzle of oil, and add the onion. Sauté for a few seconds.

  • As soon as the onion begins to sauté, add the radicchio. Salt it and let it cook over medium heat for 5 minutes, stirring with a wooden spoon.

  • After a few minutes, the radicchio will have softened, add the balsamic glaze and let it sauté for a few seconds.

    Your radicchio is ready. Good both cold and hot!
