AMARETTI STAR CAKE

The Amaretti star cake is a soft, delicate and fragrant dessert, perfect for special occasions or a tasty snack, ideal for Christmas or a family lunch. Easy to prepare, elegant and also versatile: you can replace the liqueur with orange juice, add slices of fruit or a dark chocolate glaze. It keeps 3–4 days at room temperature, well covered with a cake dome. Below, let’s see together what is needed to prepare our Amaretti star cake:

Ingredients

  • 5 eggs
  • 1/2 cup + 2 tbsp sugar
  • 1 1/4 cups all-purpose flour (00)
  • potato starch
  • 1 tbsp baking powder
  • 6 tbsp neutral seed oil (about 3 fl oz)
  • 2 tbsp Amaretto liqueur (or rum / orange juice as alternative)
  • 7 oz amaretti cookies (about 2 cups crumbled)
  • vanilla extract
  • a pinch of salt
  • to taste powdered sugar (for decoration)

Steps

  • Start by blitzing the amaretti in a food processor until you obtain a fine, even crumb. In a large bowl, beat the eggs with the sugar and a pinch of salt using electric beaters. Continue beating for about 10 minutes, until you obtain a light, voluminous and frothy mixture.

  • Add the vanilla extract, the sifted flour, potato starch and baking powder. Be careful not to deflate the batter — fold gently from the bottom upwards with a spatula.

  • Pour the seed oil and the Amaretto liqueur (or rum for a stronger flavor, or alternatively orange juice) into the batter and continue to mix gently, incorporating all the ingredients.

  • At this point, add the chopped amaretti to the mixture, stir and grease a 10-inch star-shaped cake pan with a little butter and flour it.

  • Pour the batter and level it well with a spatula. Bake the cake in a preheated static oven at 347°F for 35–40 minutes. Perform the toothpick test to check for doneness.

  • Once you remove the cake from the oven, let it cool completely. Then gently invert the cake onto a serving plate. Finally, garnish with whole amaretti (optional) and powdered sugar.
