Ingredients
- 4 eggs
- 1 cup granulated sugar
- a pinch of salt
- 2 cups all-purpose (00) flour
- 6 1/4 tbsp cornstarch (frumina)
- 1/2 cup plain yogurt (or vanilla (about 125 g))
- 7 tbsp vegetable oil (about 100 ml)
- 1 packet baking powder
- vanilla extract
- juice and grated zest of 1 lemon
- 3 apples
- 1 teaspoon ground cinnamon
Steps
Peel and slice the apples into thin slices or small dice, removing the core (set aside a few apple slices for the final decoration).
Toss them with the lemon juice, add the cinnamon and mix. Meanwhile, prepare the bundt cake batter.
In a bowl, beat the eggs with the sugar until the mixture is frothy. Add a pinch of salt, the vanilla extract, the grated lemon zest and drizzle in the oil.
Add the yogurt, the flour sifted together with the cornstarch and baking powder. Work the ingredients well and finally fold in the apples, drained of excess lemon juice.
Grease and flour a bundt pan about 9.5 inches in diameter and pour in the batter, smoothing the top with a spatula.
Arrange the reserved apple slices on top of the cake. Transfer to a preheated oven at 356°F and bake for 45 minutes, until evenly golden.
Once completely cooled, dust with powdered sugar if desired and serve sliced.
