Ingredients

  • 2 ripe bananas
  • 2 tbsp rum (optional)
  • 3 eggs
  • 3/4 cup sugar
  • a pinch of salt
  • 1/4 cup vegetable oil
  • 1/2 cup oat milk
  • 1 2/3 cup all-purpose (type 00) flour
  • 1/3 cup potato starch
  • 1/3 cup dark chocolate chips
  • vanilla extract
  • 1 packet baking powder

Steps

  • Peel and slice the bananas into rounds. Place them in a bowl, mash them with a fork, add the rum and mix.

  • Set aside and, meanwhile, prepare the batter. Whisk the eggs with the sugar and a pinch of salt in a bowl. Add the vanilla extract, the oil and the oat milk in a thin stream.

  • Add the banana purée with the rum to the batter, then sift in the flour together with the potato starch and the baking powder, incorporating the dry ingredients a little at a time.

  • Stir and finally fold in the dark chocolate chips gently with a spatula.

  • Pour the mixture into a high-sided bundt pan about 8–8.7 inches (20–22 cm) in diameter, previously buttered and floured.

  • Transfer the banana and oat bundt to a preheated conventional oven at 356°F and bake for about 40 minutes, performing a toothpick test. Remove from the oven and let cool.

  • If you like, mix a little powdered sugar with 1/2 tablespoon ground cinnamon in a small bowl and sprinkle over the surface of the cake before serving.
