Ingredients

  • 3 eggs
  • 3/4 cup granulated sugar
  • 1 2/3 cup 00 flour (Italian type 00 / all-purpose flour)
  • 1/3 cup frumina (starch)
  • 1/3 cup vegetable oil
  • A few drop(s) almond extract
  • 12 oz carrots (peeled)
  • grated zest of one orange
  • 1 sachet baking powder (about 1 tablespoon (≈4 teaspoons))

Steps

  • Cook the peeled and chopped carrots in a pot of plenty of boiling water for about 15 minutes.

  • Drain them well, blend them with a mixer until you obtain a smooth puree, and let it cool. In the meantime, proceed with preparing the batter.

  • In a bowl, using electric beaters, whisk the eggs with the sugar, the grated zest of an orange and a few drops of almond extract.

  • Once you have a light and fluffy mixture, add the carrot puree, the oil in a thin stream, the sifted flour together with the frumina (starch) and the baking powder.

  • Work all the ingredients well and pour the batter into a bundt pan (9.5-inch diameter), previously buttered and floured.

  • Transfer the cake to the oven and bake at 338°F for about 40-45 minutes, always performing the toothpick test.

  • Remove from the oven and let cool. Then invert the bundt cake made with cooked carrots onto a serving plate and dust as desired with powdered sugar and unsweetened cocoa powder.
