Ingredients
- 2 eggs
- 1/2 cup plain yogurt
- 1/3 cup vegetable oil
- 1 cup all-purpose flour
- 6 tbsp unsweetened cocoa powder
- 1/3 cup potato starch
- 1 cup powdered sugar (confectioners' sugar)
- vanilla extract
- a pinch of salt
- 1 tbsp baking powder
- 3 oz dark chocolate
Steps
In a large bowl, beat the eggs with the powdered sugar and a pinch of salt until you obtain a light and frothy mixture.
Add the yogurt, the oil and the vanilla extract. Mix everything well, then sift together the flour, cocoa, potato starch and baking powder. Gradually fold the dry ingredients into the wet mixture, gently mixing with a spatula.
Chop the dark chocolate and fold it into the batter, leaving a small amount aside for the final decoration.
Preheat the oven to 356°F. Line a square 8 2/3 x 8 2/3 in (22×22 cm) pan with parchment paper, pour the batter into the pan and level the surface with a spatula.
Decorate with the chopped chocolate you set aside and bake the cake for about 25-30 minutes, performing the toothpick test: it should come out clean and dry.
Remove from the oven and let the cake cool completely. Then cut it into bars and serve!
