The chocolate gold pralines and caramelized cookies are small chocolates with a surprising taste and texture. They feature a caramel white chocolate shell with an amber color and a very indulgent center. For the filling, I used the delicious spreadable cream and the original and famous Lotus Biscoff cookies, with their characteristic spiced and caramelized flavor. With these very few ingredients you can make true delicacies, perfect also as a tasty gift that will certainly be appreciated. Ingredients
- 1 1/8 cups caramelized cookies (Lotus Biscoff)
- 1 tbsp cookie-flavored spread (Lotus Biscoff)
- 3 tbsp cream cheese (spreadable)
- 7 oz gold chocolate (caramel white chocolate)
- to taste Lotus Biscoff cookie spread and cookies
Preparation
Crush the cookies and collect them in a bowl. Add the cream cheese and one tablespoon of cookie-flavored spread.
Mix the ingredients well until you obtain a homogeneous mixture. Then, take small pieces of the mixture and roll them between your hands, forming compact balls of the same size.
Place them, one by one, on a tray lined with parchment paper and, once all the mixture is used, transfer them to the refrigerator for about 1 hour to firm up.
Melt the caramel white chocolate in a small saucepan over a bain-marie and take the balls out of the fridge.
Dip each ball, one at a time, into the melted gold chocolate to fully coat them. Let them set and repeat the operation, dipping them again in the chocolate.
Once all the pralines are well covered and solidified, decorate them with the cookie spread melted over a bain-marie and sprinkle the surface with some crumbled caramelized cookies.
Store the chocolate gold pralines and caramelized cookies in the refrigerator in an airtight container.
