Ingredients

  • 2 eggs
  • 3/4 cup heavy cream
  • 3 oz granulated sugar (about 1/3 cup + 1 tbsp)

  • 1/4 cup almond flour
  • 5 tbsp potato starch
  • 2 tsp baking powder
  • a pinch of salt
  • 1/3 cup candied fruit (orange, citron…)
  • 3 tbsp raisins
  • vanilla extract
  • 1/2 grated zest of 1/2 lemon
  • 1/2 grated zest of 1/2 orange
  • as needed pearl sugar (coarse sugar)
  • as needed powdered sugar

Steps

  • In a bowl, whisk the eggs with a pinch of salt and the sugar until you obtain a light, fluffy mixture.

  • Add the vanilla extract and the grated zests of lemon and orange. Pour in the cream while continuing to whisk, then add the almond flour.

  • With a spatula, mix into the batter the candied fruit cut into small cubes (or, if you prefer, chocolate chips) and the previously soaked and well-drained raisins.
