Ingredients
- 4 eggs
- 1 cup granulated sugar
- 2 1/2 cups all-purpose flour
- 1/2 cup plain yogurt (or vanilla)
- 7 tbsp vegetable oil
- 1 packet baking powder
- vanilla extract
- a pinch of salt
- grated zest of one lemon
- to taste powdered sugar (for garnish)
Steps
In a bowl, beat the eggs with the sugar until you obtain a frothy mixture. Add a pinch of salt, the vanilla extract, the grated lemon zest and slowly stream in the oil while continuing to mix.
Fold in the yogurt, then sift in the flour together with the baking powder and mix well until the batter is smooth and free of lumps.
Pour the batter into a 9.5-inch (24 cm) ring pan previously buttered and floured, and level the surface with a spatula.
Transfer to a preheated oven at 356°F and bake for about 40 minutes, or until the bundt cake is golden and a skewer inserted into the center comes out clean.
Once completely cooled, dust as desired with powdered sugar. The classic yogurt bundt cake is ready to serve.
