Ingredients

  • 2 1/2 cups all-purpose flour
  • 3 eggs
  • vanilla extract
  • 7 tbsp butter (softened)
  • 1 cup granulated sugar
  • 1/2 cup strong espresso (cooled)
  • 2 tsp baking powder
  • a pinch of salt
  • 3.5 oz dark chocolate chips

Preparation

  • Start by separating the yolks from the whites. Place the yolks in a bowl and beat with the sugar until you obtain a pale and fluffy mixture.

  • Add the softened butter cut into pieces and continue to beat until you get a smooth and homogeneous cream.

  • Add the cooled strong espresso and the vanilla extract. Fold in the sifted flour with the baking powder and mix until you obtain a soft, well-blended batter.

  • In a separate bowl, whisk the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the batter little by little, mixing from the bottom up with a spatula so as not to deflate them.

  • Add the chocolate chips and mix to distribute them evenly in the batter.

  • Butter and flour a loaf pan of about 12 inches, pour the batter inside and level the surface with a spatula.

  • Bake in a preheated conventional oven at 356°F for about 45 minutes; perform the skewer test to check doneness: if it comes out dry, the plumcake is ready.

  • Once baked, remove the cake from the oven and let it cool completely, then carefully unmold it and place it on a serving platter.
