Ingredients

  • 1 2/3 cups all-purpose flour
  • 1/3 cup potato starch
  • 7/8 cup granulated sugar
  • 2/3 cup Greek yogurt
  • 1/3 cup milk
  • 3 eggs
  • 1/2 cup vegetable oil
  • 2 tbsp instant coffee
  • 1 packet baking powder
  • a pinch of salt
  • 5.3 oz dark chocolate
  • 3 1/2 tbsp butter
  • as needed coarse sugar crystals

Steps

  • Prepare the batter by beating the eggs in a bowl with the sugar and a pinch of salt until light and frothy. Add the oil in a thin stream, then the yogurt and the instant coffee dissolved in the milk.

  • Fold into the mixture the flour sifted together with the potato starch and the baking powder. Pour the batter into a buttered and floured colomba mold and bake in a preheated oven at 356°F for about 35 minutes, or until a skewer inserted into the center comes out clean.

  • Let cool completely and, meanwhile, prepare the glaze. Melt the dark chocolate and butter in a double boiler or in the microwave. Stir well until you obtain a smooth, glossy mixture.

  • Once the cake is cold, transfer it to a wire rack, pour the chocolate coating over it and, before it sets, sprinkle the coarse sugar crystals on top.

  • Once the glaze has set, the coffee Colomba cake covered in dark chocolate is ready to be served!
