Ingredients
- 2 eggs
- 6 1/2 tbsps granulated sugar
- 1/2 cup vegetable oil
- 3 1/4 cups all-purpose flour ("00" style)
- 1 cup almond flour
- a pinch of salt
- 2 1/2 tbsps honey
- grated zest of one lemon
- 1 tbsps baking powder
- 1 egg (for glazing)
- unsweetened cocoa powder
Steps
Place the eggs in a large bowl and add the granulated sugar. Using a whisk, beat the mixture until it becomes frothy and light in color.
Pour the oil in a thin stream while continuing to mix, then incorporate the honey. Add the almond flour and the sifted all-purpose flour mixed with the baking powder. Add a pinch of salt and the grated lemon zest.
Start mixing with a spatula and, when the dough begins to take shape, knead it with your hands until you obtain a homogeneous and slightly sticky mixture. If necessary, add a few more tablespoons of flour, keeping the dough soft and easy to work with.
