An irresistible bite of goodness, perfect for an afternoon snack or after a meal. Depending on the spreadable pistachio cream you use, your dough may be more or less sticky. Ingredients

  • 3/4 cup pistachio spread (about 6.35 oz / 180 g) (+ as needed to decorate)
  • 3/4 cup all-purpose flour (about 3.5 oz / 100 g)
  • 1/3 cup pistachio flour (about 1.8 oz / 50 g)
  • vanilla extract
  • 1 egg
  • 2 tsp baking powder (about 8 g)
  • as needed chopped pistachios

Steps

  • Put the sifted flour in a bowl with the baking powder, then add the pistachio flour, the vanilla extract and the egg.

  • Finally add the pistachio spread and knead everything until you form a smooth dough. Only if necessary, add more flour little by little.

  • With slightly damp hands, take pieces of dough and form balls of about 1 oz each (approximately 25–30 g each).

  • Place them, a few at a time, on a tray lined with parchment paper and create a small indentation in the center by pressing with your finger (but without piercing the dough).

  • Optionally garnish with chopped pistachios. Transfer the tray to the refrigerator and let the cookies firm up for at least 15–20 minutes.

  • Transfer them to the oven baking sheet and bake for 12 minutes at 338°F (in a preheated oven), avoiding overbaking.

  • Remove from the oven and let cool completely. Then finish with small dollops of pistachio spread, filling the indentations made earlier.

  • The pistachio cream cookies are ready to be served.
