The dark chocolate and rum cake is an easy and quick homemade dessert made with few ingredients, with a soft texture and an intoxicating aroma. It is made from a simple yet special batter that contains a spreadable dark chocolate cream and a good rum. A rich, enveloping union of flavors that conquers from the first bite. You can also bake this cake in a classic round cake pan of 9–10 in diameter instead of a rectangular pan. It can be filled or served accompanied by whipped cream, creams or ice cream. Ingredients
- 3 eggs
- 1 1/4 cups all-purpose flour
- 1/4 cup potato starch
- 3/4 cup granulated sugar
- 7/8 cup milk
- 3 1/3 tbsp rum
- vanilla extract
- a pinch of salt
- 7 oz dark chocolate spread
- 1 packet baking powder
- as needed sugar sprinkles
Steps
In a bowl, using electric beaters, whip the eggs together with the sugar, a pinch of salt and the vanilla extract.
Once you have a light and frothy mixture, add the dark chocolate spread spoonful by spoonful and mix.
Sift the flour with the potato starch and the baking powder. Alternate the dry ingredients with the milk, pouring it in a thin stream little by little into the batter.
Also add the rum and fold everything well with a spatula until you obtain a homogeneous batter, free of lumps.
Grease and flour an 11×9 in rectangular baking pan, or line it with parchment paper. Pour the batter into it, leveling the surface, and decorate to taste with sugar sprinkles.
Bake in a preheated oven at 356°F for about 30 minutes, doing the usual toothpick test. Once removed from the oven, let it cool completely.
Finish by dusting the surface with powdered sugar. The dark chocolate and rum cake is ready to be served.
