Mother hare gave each kit an egg to bring to the children in the garden. The first, who took a golden egg, broke it while jumping over the gate. The second, with the silver egg, lost it because of a magpie. The third, with a chocolate egg, ate it with a squirrel. The fourth, with a speckled egg, dropped it into the stream. The fifth, with the yellow egg, destroyed it while playing with fox cubs. The sixth, with the red egg, broke it while scuffling with another little hare. Finally, the seventh kit, the youngest, took a blue egg and, avoiding distractions and dangers, managed to bring it safely to the garden. Thus, he became the true Easter hare! The seventh little hare had an extraordinary willpower that allowed him not to be distracted and to overcome obstacles, determined to complete his mission. The moral is that willpower has no age and, to accomplish a project, it is essential to build solid foundations, with will as the cornerstone to reach one’s goals.”

Ingredients

  • 4 eggs
  • 2 7/8 cups all-purpose flour
  • 1/3 cup potato starch
  • 1 cup granulated sugar
  • 7 tbsp + 1 tsp vegetable oil (seed oil)
  • 3/4 cup milk
  • 1 packet baking powder ((about 2 1/4 tsp))
  • vanilla extract
  • 1/2 vial orange blossom extract
  • zest of 1/2 lemon and 1/2 orange
  • 1/2 teaspoon ground cinnamon
  • a pinch of salt
  • as needed powdered sugar (for decorating)

Steps

  • In a large bowl, beat the eggs with the sugar until the mixture is pale and frothy. Add the vegetable oil, the milk, the vanilla extract and the orange blossom extract. Continue mixing until you obtain a homogeneous batter.

  • Gradually add the sifted flour together with the potato starch and the baking powder, the grated lemon and orange zests, the cinnamon and a pinch of salt.

  • Preheat the oven to 356°F. Grease and flour a bunny-shaped pan and pour the batter into it, leveling the surface with the back of a spoon.

  • Transfer the cake to the oven and bake for about 30-35 minutes, or until golden, performing the toothpick test. As always, baking time may vary depending on the oven.

  • Once baked, remove the cake from the oven and let it cool completely. You can decorate the cake with powdered sugar, icing, or melted chocolate and add details to make the bunny shape more distinct.
