Ingredients
- 4 eggs
- 3 1/4 cups all-purpose flour
- 7 oz Greek yogurt (about 3/4 cup)
- 1/2 cup milk (130 ml (about 4.4 fl oz))
- 2 tsp sugar
- 1/2 cup vegetable oil (130 ml (about 4.4 fl oz))
- 3 oz grated Parmesan (about 3/4 cup)
- 1 sachet instant baking powder for savory preparations
- 1 3/4 tsp salt (about 10 g)
- 7 oz deli meats of your choice (speck, prosciutto, salami, etc.)
- 7 oz cheeses of your choice (scamorza, Gouda, provolone, etc.)
- to taste sesame seeds (for decoration)
Steps
Beat the eggs with the sugar and a pinch of salt until the mixture is homogeneous and frothy. Add the Greek yogurt and the milk, then pour the vegetable oil in a thin stream while continuing to mix.
Sift the flour and the instant baking powder directly over the mixture, incorporating them gradually, and fold with a spatula until you obtain a smooth, homogeneous batter.
Add the grated Parmesan and the mix of chosen deli meats and cheeses, distributing them gently and evenly throughout the batter.
Butter and flour a colomba-shaped pan (or use a disposable colomba mold). Pour the batter into the mold, level it well with a spatula, and sprinkle the surface with sesame seeds.
Bake in a preheated oven at 356°F for about 40 minutes, or until the colomba is evenly golden (always perform the classic toothpick test).
Once baked, remove the colomba from the oven and let it cool in the pan for a few minutes, then transfer it to a rack to cool completely.
