Flourless hazelnut cake and gluten-free, made with very few ingredients and with an exceptional result. It has a texture similar to the Piedmontese cake or the famous caprese cake but without chocolate in the batter. In addition to hazelnuts, you can also use other types of nuts (e.g. almonds, peanuts, walnuts, pistachios, cashews…), this is a dessert particularly suitable for those who cannot consume gluten and it is very easy to prepare. Ingredients
- 1 1/3 cup toasted hazelnuts
- 1/2 cup toasted almonds
- 1 1/8 cup butter
- 7/8 cup granulated sugar
- 5 eggs
- a pinch of salt
- vanilla extract
- 1 packet (about 1 tbsp) baking powder
Steps
Chop the toasted hazelnuts and almonds in a food processor until you obtain a rather fine texture (almost like flour).
Separate the egg yolks from the whites. Whip the egg whites in a bowl until stiff peaks form, gradually adding about 6½ tablespoons of sugar (taken from the total).
In another bowl, cream the butter with the remaining sugar (about 7/8 cup total minus the portion used for the whites) until you get a light and creamy mixture.
Add the vanilla extract, a pinch of salt and one yolk at a time. Sift in the baking powder, add the finely chopped hazelnuts and almonds and mix everything together.
Gently fold in the previously whipped egg whites, mixing from the bottom up with a spatula.
Pour the batter into a well-buttered and floured 9 1/2-inch diameter cake pan and level the surface.
Transfer to a preheated oven at 338°F and bake the cake for about 40 minutes, taking care not to let the surface brown too much (if it does, cover with aluminum foil and continue baking).
The inside should be moist but not liquid. Remove from the oven and let cool completely for at least 1 hour.
Invert the flourless hazelnut cake onto a serving plate or cake stand and decorate as desired with cocoa powder and powdered sugar.
