The bread with pancetta is a special, savory leavened bread with pancetta cubes folded straight into the dough. It’s a simple way to add a flavorful touch to a staple food on our tables. Baking bread at home is always a great thrill: the comforting aroma, a nicely crisp crust and a soft, aerated crumb. Served as an aperitif or starter, for example cut into cubes, it becomes even more tempting. Below we’ll see what we need to easily prepare homemade bread with pancetta:

Ingredients
- 1 1/2 cups type 1 flour
- 4 1/2 cups type 0 flour
- 2 1/4 cups water
- 1 1/4 tsp active dry yeast (or 12 g fresh yeast)
- 3 1/2 tsp salt
- 1 1/3 tbsp extra virgin olive oil
- 4 1/4 oz diced pancetta
Preparation
Start by dissolving the fresh yeast in 50% of the water taken from the total amount. Pour it into the center of a bowl with the sifted flours, mix lightly with a fork and cover. Let rest for 25-30 minutes at room temperature.
Then add the remaining water, the salt and the olive oil. Work the dough on the work surface, making the typical folds, until you obtain a smooth, homogeneous dough ball.
Let it rise at room temperature for 2 hours in an oiled bowl covered with plastic wrap. Then place it in the refrigerator for at least 8 hours (it’s best to prepare the dough the evening before and leave it to rest in the fridge overnight).
After this time, shape two dough balls, add the pancetta to each and set them to rise for 2-3 hours at room temperature in a suitable container (or on a baking sheet lined with parchment paper), keeping them well apart.
Then round the dough, giving it the desired shape (round or oval) and dust with semolina. Place the loaves in proofing baskets (with the seam side up). Cover and let rise for another 2 hours at room temperature.
Preheat the oven to 230°C (446°F). Turn the loaves onto a baking sheet and bake for 20 minutes. Then lower the temperature to 210°C (410°F) and continue baking for another 15-20 minutes.
With the oven door slightly ajar, bake for another 10 minutes (at the same temperature) to dry the crumb inside.
Once removed from the oven and cooled, the homemade bread with pancetta is ready to be enjoyed.
