Ingredients

  • 1 1/4 cup all-purpose flour
  • 1 cup (8.5 fl oz) water
  • 3 1/2 tbsp unsalted butter
  • 1 large egg egg
  • a pinch of salt
  • vanilla extract
  • as needed vegetable oil (for frying)
  • to taste granulated sugar

Steps

  • Pour the water into a heavy-bottomed saucepan, add the vanilla extract, the butter cut into pieces and the salt, then heat over medium heat until the butter has completely melted.

  • Add the flour all at once and stir vigorously until you obtain a compact dough that pulls away from the sides of the pan.

  • Remove from the heat, let it cool slightly and incorporate the egg, stirring until you obtain a smooth, thick and homogeneous mixture.

  • Transfer the dough into a piping bag fitted with a star tip. Heat a generous amount of vegetable oil until it reaches 338°F and form the churros directly into the hot oil, cutting them to the desired length.

  • Fry a few at a time, turning them during cooking until evenly golden. Drain on paper towels to remove excess oil.

  • Roll the churros while still hot in granulated sugar, serve immediately and, if desired, accompany with chocolate-hazelnut spread.
