To store the ice cream sandwiches, place them in an airtight container in the freezer; they will keep for up to 2 weeks. For the best texture, let them sit at room temperature for about 3–5 minutes before serving. This step allows the ice cream to soften slightly, making each bite softer and more enjoyable, preventing it from being too hard. Ingredients

  • 10 cookies (type Oro Saiwa)
  • 2/3 cup Greek yogurt (about 150 g (≈ 5.3 oz))
  • 1 tsp honey (or sweetener to taste)
  • 5.3 oz spreadable cheese (e.g., mascarpone or Philadelphia (about 150 g))
  • 1 tsp vanilla extract
  • 2 oz 70% dark chocolate

Steps

  • In a large bowl, sift the spreadable cheese to remove any lumps and make it softer. Add the Greek yogurt and mix well with a spatula or a whisk until you obtain a smooth cream.

  • Add the honey or your preferred sweetener and the vanilla extract. Fold in the finely chopped dark chocolate pieces (about 30 g taken from the total) and mix gently to distribute them evenly.

  • Arrange the Oro Saiwa–type cookies on a tray, side by side. Spread the cream on one side of a cookie, then cover it with another cookie to form a “sandwich.” Press gently so they adhere well.

  • Transfer to the freezer and, in the meantime, melt the remaining dark chocolate in a bain-marie or in the microwave.

  • Take the ice cream sandwiches out of the freezer and dip or brush a corner of each sandwich with the melted chocolate. Return them to the freezer for at least 2 hours.

  • To enjoy the ice cream sandwiches at their best, it is important to let them sit at room temperature for a few minutes before serving.
