KEFIR PLUMCAKE WITH DARK CHOCOLATE CHIPS

Kefir is a great alternative to make your desserts fluffier and it is also low in lactose but, if you prefer, you can substitute it with plain yogurt. Ingredients

  • 2/3 cup kefir
  • 3/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 6 tbsp potato starch
  • 5 egg whites egg whites (about 5)
  • 1/2 cup vegetable oil
  • vanilla extract
  • 1 tbsp baking powder
  • a pinch of salt
  • 1/2 cup dark chocolate chips

Steps

  • Whip the egg whites to stiff peaks in a large bowl, gradually adding the sugar.

  • In another bowl, mix the oil with room-temperature kefir, the vanilla extract and a pinch of salt. Sift the flour, potato starch and baking powder directly over the mixture.

  • Gently fold the previously whipped egg whites into the batter using a spatula from the bottom upward and also add the dark chocolate chips.

  • Pour the batter into a buttered and floured 12-inch loaf pan, level the surface and transfer to a preheated oven at 338°F.

  • Bake for about 35-40 minutes, performing the classic toothpick test (it should come out perfectly dry).

  • Remove from the oven, let cool and then unmold the cake, turning it out onto a serving plate.
