Sweet, fresh and fragrant, these lemon truffles are perfect to prepare in a few minutes and enjoy at any time of the day. Soft inside, coated in coconut and with an irresistible lemon aroma, they are ideal for a tasty break or to surprise friends and family. For a more intense lemon flavor, you can add a bit of zest directly into the mixture as well as on the coating. If you want an “adult” version, simply replace the lemon juice with a tablespoon of limoncello: it will add aroma without making the mixture too soft. Ingredients
- 1 cup ricotta cheese
- 2/3 cup powdered sugar
- 1 1/2 cups grated/desiccated coconut (rapè) (+ as needed for coating)
- 1-2 tablespoons lemon juice (or 1 tablespoon limoncello)
- the grated zest of one lemon
Steps
In a large bowl, mix the ricotta with the powdered sugar until you obtain a soft, homogeneous cream.
Add the grated coconut, the lemon juice or the limoncello and gently combine everything until you obtain a compact but soft mixture.
Form balls with slightly damp hands and roll them in the grated coconut mixed with the grated lemon zest.
Finally, place the truffles in the refrigerator for at least 30 minutes to firm up. Then, remove them from the fridge a few minutes before serving, arranging them on a serving tray or in paper cups.
The lemon no-bake truffles are ready to be enjoyed!
