Ingredients

  • 3 eggs
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1/3 cup all-purpose flour
  • 1/4 cup potato starch
  • 2 teaspoons baking powder
  • 2.5 oz chopped pistachios (unsalted)
  • 2.1 oz chopped almonds (unsalted)
  • 1/2 cup pistachio spread
  • a pinch of salt
  • vanilla extract

Steps

  • Whip the eggs in a large bowl with the sugar and a pinch of salt until you obtain a light and frothy mixture. Add the vegetable oil in a thin stream, the pistachio spread and the vanilla extract, mixing until you have a homogeneous batter.

  • Combine the sifted flour with the potato starch and the baking powder. Add the chopped pistachios and almonds and mix well.

  • Pour the batter into the molds (these are flower-shaped with a diameter of about 2 3/8 inches) previously buttered and floured, leaving a bit of space (about 3/8 inch) from the edges.

  • Bake the mini cakes in a preheated oven at 338° F and cook for about 18-20 minutes, performing the toothpick test.

  • Remove from the oven and let cool. Then transfer them to a serving platter. Serve the pistachio mini cakes as they are or decorate them with a little powdered sugar, pistachio spread and a few pistachios.
