The Baileys no-bake treats are extremely easy to make, perfect for parties, to enjoy with a good coffee or to give as a gift. You can roll them in unsweetened cocoa or coat them in melted chocolate—whatever you prefer! The ganache should be firm enough to scoop with a spoon, but soft enough to shape with your hands. If it becomes too firm, leave it at room temperature for a few minutes; if it’s too soft, a few extra minutes in the fridge will make it perfect. Caution: it melts quickly, so work gently. Here’s what we need to make these delicious Baileys no-bake treats:

Ingredients

  • 7 oz dark chocolate
  • 1/2 cup heavy cream
  • 1 1/2 tbsp butter
  • 1-2 tbsp Baileys liqueur
  • to taste unsweetened cocoa powder (for coating, or additional melted dark chocolate)

Preparation

  • Finely chop the dark chocolate with a knife and transfer it to a heatproof bowl.

  • Heat the cream and butter in a small saucepan until just about to boil, without letting it come to a full boil.

  • Pour the mixture, in several additions, over the chopped chocolate and let it rest for about 1 minute to allow the chocolate to start melting.

  • Stir gently with a spatula or whisk until you obtain a smooth, glossy, homogeneous cream. Add the Baileys liqueur and continue stirring until the ganache is well blended.

  • Cover the bowl and transfer to the refrigerator for 1–2 hours, until the ganache becomes firm enough to be handled.

  • Scoop small amounts of the mixture with a teaspoon and shape them into balls with your hands, trying to keep them all the same size (about 0.5 oz / 15 g each).

  • Arrange the balls on a tray lined with parchment paper. Roll them in unsweetened cocoa powder to coat completely. Alternatively, melt additional dark (or white or milk) chocolate in a bain-marie, dip the balls into the melted chocolate and let the excess drip off.

  • Place the treats on parchment paper and let them set completely before serving or storing.
