Ingredients
- 3 eggs
- 1 2/3 cups (200 g) all-purpose flour
- 6 tablespoons (about 50 g) potato starch
- 1/3 cup (80 ml / 2.7 fl oz) vegetable oil
- 7 tablespoons (100 ml / 3.4 fl oz) milk
- 7/8 cup (250 g / 8.8 oz) sweetened condensed milk
- a pinch of salt
- 1 packet (sachet) baking powder for cakes
- zest of 1/2 lemon and 1/2 orange
Steps
Finely grate the lemon and orange zests, taking care to avoid the bitter white pith. In a large bowl, break the eggs and add a pinch of salt.
Beat the eggs with an electric mixer on medium-high speed until pale and frothy, about 5–7 minutes. Add the condensed milk, the oil and the milk to the eggs, continuing to mix.
Gradually add the sifted flour, potato starch and baking powder, folding gently from the bottom up with a spatula. Also fold in the grated lemon and orange zests.
Transfer the batter into a greased and floured loaf pan about 8 2/3–9 1/2 in (22–24 cm) or line it with parchment paper, smoothing the surface with a spatula.
Bake in a preheated conventional oven at 356°F (180°C) for about 35–40 minutes, performing the usual toothpick test. Remove from the oven and let cool in the pan for about 10 minutes.
Then unmold and let cool completely on a wire rack before slicing and serving. Finally, dust the surface with powdered sugar if desired. The condensed milk plumcake is ready to enjoy!
