Quick mini pizzas with spreadable cheese, perfect for when you suddenly crave pizza. They require no rising, are tasty and easy to prepare. An incredible result that will amaze you using very few ingredients, including spreadable cheese like Philadelphia or robiola. For the topping I chose the classic tomato and oregano or tomato and mozzarella, but of course you can add whatever you prefer to your mini pizzas. Ingredients
- 1 2/3 cups all-purpose flour
- 7 oz spreadable cheese (such as Philadelphia, drained ricotta or robiola)
- 1 3/4 tbsp butter
- a pinch of baking soda
- 1/2 tsp salt
- 2/3 cup tomato purée
- 4 oz mozzarella (fiordilatte)
- salt
- extra virgin olive oil
- basil or oregano
Steps
Put the sifted flour in a bowl with a pinch of baking soda. Add the spreadable cheese, the butter cut into pieces, and the salt.
Work everything well, preferably with your hands, until you obtain a homogeneous dough.
Wrap it in plastic wrap and let it rest for 15–20 minutes. Meanwhile, prepare the topping.
Mix the tomato purée in a bowl with a pinch of salt, a drizzle of oil, basil and/or oregano to taste. Also cut the mozzarella into small cubes.
After the resting time, take the dough and, with the help of some flour, roll it out into a thin sheet about 3 mm thick (about 1/8 inch).
Cut out the mini pizzas using a round cutter about 10 cm in diameter (about 4 inches). Place them on a baking sheet lined with parchment paper, spacing them apart.
Top each round with the tomato purée and the diced mozzarella. Transfer the baking sheet to an oven preheated to 356°F. Bake for about 15 minutes, until the edges are golden.
