Ingredients
- 3/4 + 1 tbsp cup ricotta (about 200 g)
- 2 eggs
- 2/3 cup granulated sugar (about 130 g)
- 1 1/3 cup all-purpose flour (about 160 g)
- 5 tbsp cornstarch (about 40 g)
- 3/4 cup granulated sugar (about 150 g)
- 2 2/3 tbsp vegetable oil (about 40 ml)
- vanilla extract
- zest of 1/2 lemon and 1/2 orange, grated
- a pinch of salt
- 1 packet baking powder (for cakes)
- as needed jam or preserves of your choice
Steps
In a bowl, beat the eggs with the sugar and a pinch of salt until you obtain a pale and fluffy mixture. Add the vanilla extract and the grated lemon and orange zest.
Add the oil in a thin stream, the well-drained ricotta (previously passed through a sieve). Also add the flour sifted together with the cornstarch and the baking powder, and mix everything well.
Butter and flour a 22–24 cm (about 8 2/3–9 7/16 inch) cake pan and pour in the batter, leveling the surface with a spatula.
Using a piping bag filled with jam (or your preferred preserve), decorate the surface of the batter creating a spiral pattern.
Bake the cake in a preheated oven at 356°F (180°C) for about 35 minutes, performing the classic toothpick test — it should come out clean and dry.
Remove from the oven and let cool completely. The ricotta and jam cake is now ready to be served: dust it with powdered sugar if desired.
