Ingredients
- 2 1/3 cups all-purpose flour
- 2/3 cup milk
- 1 egg
- 2 tbsp butter
- 2 1/2 tbsp sugar
- 0.5 oz fresh baker's yeast
- 1 3/4 tsp salt
- 1 egg yolk (for brushing)
- as needed sesame seeds (for decoration)
- 5 1/4 oz cooked ham (or another cold cut of your choice)
- 3 1/2 oz provolone
- 3 1/2 oz smoked scamorza (or provola)
Steps
Mix the flour with the sugar and the yeast dissolved in warm milk. Make a well in the center and add the egg. Begin to knead, then add the soft butter little by little and finally the salt.
Once you obtain a smooth, homogeneous dough ball, cover it and let it rise at room temperature for about 2 hours, or until doubled in size.
Meanwhile, prepare the filling. Slice or cube the cold cuts and cheeses, according to your preference.
After the rising time, roll out the dough on a lightly floured surface to form an oval sheet about 1/4 inch thick.
On one half of the dough sheet, make strips about 3/4 inch wide. On the other half place the filling of cured meats and cheeses and roll up, forming one large cornettone, taking care to seal the ends well.
Place the brioche on a baking tray lined with parchment paper and let it rise for another hour. Before baking, brush the surface with the beaten egg yolk and sprinkle with sesame seeds.
Preheat the oven to 356°F and bake for 20–25 minutes, or until evenly golden. Remove from the oven and let cool slightly. The savory stuffed cornettone is ready to be served at the table.
