Ingredients
- 3 1/4 cups all-purpose flour
- 2/3 cup granulated sugar
- 2 eggs
- 2/3 cup unsalted butter (about 5.3 oz / 10 1/2 tbsp)
- 3 apples
- a pinch of salt
- grated zest of 1 lemon
- 1 teaspoon baking powder
- to taste apricot jam
Steps
Prepare the shortcrust pastry. In a large bowl, combine the flour, sugar, baking powder and a pinch of salt. Add the butter cut into pieces and work the ingredients until you obtain a sandy mixture.
Add the eggs and the grated lemon zest. Knead quickly until you get a smooth dough ball. Wrap the pastry in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
Meanwhile, peel the apples, remove the core and slice them thinly. Take a square baking pan (9 x 9 in) and line it with parchment paper.
Take the pastry out of the fridge and roll out about 2/3 of it with a rolling pin. Transfer the rolled dough into the pan, press well on the edges and prick the bottom with a fork.
Spread a layer of apricot jam over the shortcrust base. Arrange the apple slices evenly over the jam.
Roll out the remaining shortcrust pastry and cover the apples, sealing the edges well and pricking the surface with a fork to allow steam to escape during baking.
Preheat the oven to 356°F. Bake the dessert for about 45 minutes, or until the surface is golden.
Remove from the oven and let cool completely. Then cut the tart into 12 squares and, if desired, dust with powdered sugar. The shortcrust squares with apples and jam are ready to serve.
