Sicilian almond paste cookies are soft and fragrant little sweets, made with a dough of only egg whites and only almond flour. It’s preferable to let the dough rest in the fridge even for a whole night so it can dry. The choice of almonds, with or without skin, varies depending on the type of flour you want to obtain: the flour from unpeeled almonds is coarser and a little less sweet. If, instead, you are looking for a much quicker recipe that doesn’t require resting in the fridge, these soft almond cookies ready in a few minutes can be a valid alternative. Ingredients
- 1 egg white
- 1 1/3 cup almond flour ((about 125 g / 4.4 oz))
- 6 1/2 tbsp powdered sugar (+ as needed for dusting (about 50 g / 1.8 oz))
- almond extract (a few drops)

Steps
Whisk the egg white until foamy with a few drops of almond extract. Put the powdered sugar and almond flour in a bowl (you can easily make almond flour at home with a food processor).
Mix all the ingredients until you get a well-combined dough. Cover with plastic wrap and let rest in the fridge for at least 3–4 hours (even better if overnight).
Take the dough out and, with slightly moistened hands, portion out pieces of about 0.7 oz each (about 20 g). Shape into balls and place them on a baking tray lined with parchment paper (don’t worry if the dough is a bit sticky).
Roll them, one by one, in the bowl with powdered sugar and place them again on the tray, spaced apart.
Slightly press the center of each cookie and insert almonds (optional). Transfer the tray to an oven preheated to 320°F and bake for 15–20 minutes, no more.
Remove from the oven and let cool completely on a rack. Arrange the Sicilian almond paste cookies on a platter and serve.
