Ingredients
- 2 eggs
- 1/2 cup + 2 tbsp granulated sugar
- 3 tbsp neutral oil (seed oil)
- 3/4 cup ricotta
- 1 1/3 cups all-purpose flour (00)
- 1/4 cup cornstarch
- vanilla extract
- 1 teaspoon ground cinnamon
- one sachet of baking powder

- as needed powdered sugar
Steps
Beat the eggs with the sugar, vanilla extract, ground cinnamon and the oil slowly drizzled in, until you obtain a light, frothy mixture.
Drain the ricotta and pass it through a fine sieve to make it smoother and creamier, then add it to the egg mixture.
Finally, fold in the sifted flour together with the cornstarch and the baking powder, mixing well to avoid any lumps.
Pour the batter into a 9.5-inch (24 cm) cake pan, previously greased and floured or lined with parchment paper.
Level with a spatula and add spoonfuls of the Lotus spread directly onto the surface of the cake.
Transfer to a preheated oven at 356°F and bake for about 30–35 minutes, performing the classic toothpick test.
Remove from the oven, let cool completely and transfer to a serving platter. Before serving, decorate the cake as desired with powdered sugar, extra spread and coarsely crushed Lotus cookies.
