Ingredients

  • 2 1/8 cups all-purpose flour
  • 4 tbsp unsweetened cocoa powder
  • 3/4 cup granulated sugar (+ extra for coating)
  • 1 large egg
  • 3 1/3 tbsp neutral (seed) oil
  • 1/4 cup coffee (espresso or moka, cold)
  • 1 pinch salt
  • vanilla extract
  • 1/2 packet baking powder
  • to taste ground cinnamon (optional, to mix with the coating sugar)

Steps

  • In a large bowl, beat the egg with the sugar and a pinch of salt until the mixture is pale and frothy.

  • Add the oil, the cold coffee and the vanilla extract, and mix well.

    Sift the flour with the cocoa and the baking powder. Add them to the wet mixture little by little.

  • Stir with a spatula until you obtain a soft but workable dough (not sticky). If necessary, let rest in the refrigerator for 15–20 minutes.

  • Portion about 0.9 oz (25 g) of dough for each cookie and roll into smooth balls. Roll them in a bowl with granulated sugar optionally mixed with a pinch of cinnamon.

  • Arrange the balls on a baking sheet lined with parchment paper, spacing them slightly. Bake in a preheated conventional oven at 356°F for 15 minutes.

  • The cookies should feel soft to the touch while still warm. Remove from the oven and let cool completely on a wire rack.
