The soft milk and cocoa rolls are exceptional sweets, with an incredibly soft texture and an intoxicating aroma. They can be enjoyed simply as they are or filled with your favorite ingredients — from pastry cream to various jams, cheeses or spreadable creams, or accompanied by simple whipped cream. They are uniquely indulgent, ideal for both snack time and breakfast. Below, let’s see together what you need to make our soft milk and cocoa rolls at home:

Ingredients
- 4 cups type 0 flour (all-purpose flour)
- 0.35 oz fresh yeast (about 10 g)
- 5 1/3 tbsp unsweetened cocoa powder
- 6 1/3 tbsp granulated sugar
- 1 3/8 cups milk
- 1 1/4 tsp salt
- 3 1/3 tbsp vegetable oil
Steps
Combine the flour, cocoa and the yeast dissolved in 1 cup of milk in a bowl. Start mixing, then add the sugar, the salt and the rest of the milk (about 6 tbsp + 2 tsp).
Mix further until the dough begins to take shape. Incorporate the oil and work all the ingredients well to obtain an elastic, smooth and homogeneous dough ball.
Cover and leave to rise at room temperature for about 3 hours or until doubled in size.
After the necessary time, divide the dough into pieces of about 3.5–4.25 oz each. Fold them over themselves to form smooth, round balls.
Arrange the balls on a baking tray lined with parchment paper, spacing them from each other. Cover with plastic wrap and let rise again until doubled in volume (this will take about 1 hour).
Bake in a preheated conventional oven at 392° F for 15 minutes. If desired, brush the rolls while still warm with a simple syrup made of equal parts water and sugar and decorate with sugar star sprinkles.
Once well cooled, the soft milk and cocoa rolls are ready to be enjoyed. The ones you see in the photos are filled with a thin layer of chocolate spread and simple whipped cream.
