Ingredients
- 1 egg
- 1 2/3 cups all-purpose flour
- 1.6 oz almond flour
- 5 tbsp unsweetened cocoa powder
- 1/2 cup plain yogurt
- 1/2 + 2 cups+tbsp granulated sugar
- 3 tbsp + 1 tsp neutral vegetable oil
- 2 tsp baking powder
- a pinch of salt
- 1 tsp honey
- 1.8 oz dark chocolate chips
- to taste ground cinnamon (or vanilla or grated orange zest, to taste)
Steps
Lightly beat the egg with a pinch of salt, the sugar and the honey. Pour in the oil and the yogurt, continuing to mix until you obtain a uniform mixture.
Add the desired flavorings: a pinch of ground cinnamon, or vanilla, or grated orange zest, according to taste.
Gradually add the flour, cocoa, almond flour and baking powder, mixing with a spatula or spoon until you obtain a compact but soft dough.
Finally, fold in the chocolate chips, distributing them evenly throughout the dough.
Portion about 1 oz (about 2 tablespoons) of dough for each cookie. Shape into balls and place them on a baking sheet lined with parchment paper, leaving some space between each one.
If you prefer, you can gently flatten the balls to obtain a slightly flatter shape.
Preheat the oven to 356°F (180°C) on the conventional/static setting. Bake the cookies for about 12-15 minutes.
Remove from the oven and let cool on the baking sheet for 5 minutes. Then transfer them to a rack and let them cool completely.
