Soft yogurt cake squares with mixed fruit: a light, tasty and versatile dessert, perfect for breakfasts, snacks or dessert and easily adaptable to the whole family’s tastes. The cake base is made with yogurt which, together with the fruit, gives our squares a soft and moist texture. Fresh fruit can be chosen according to the season and personal preferences, for example strawberries, blueberries, peaches, apricots, apples, pears or whatever you prefer. Ingredients

  • 5 eggs
  • 2 7/8 cups all-purpose flour
  • 7/8 cup granulated sugar
  • 3/4 cup plain yogurt
  • 1/3 cup vegetable oil
  • a pinch of salt
  • 1 packet baking powder
  • vanilla extract
  • juice and grated zest of one lemon
  • 2 cups mixed fresh fruit (chopped)

Steps

  • In a large bowl, beat the eggs with a pinch of salt and the sugar until the mixture is light and frothy.

  • Add the vegetable oil in a thin stream while continuing to mix, then add the yogurt, the grated lemon zest and the vanilla extract.

  • Sift together the flour and baking powder, then add them gradually to the batter, folding gently with a spatula.

    Fold in the mixed chopped fruit (I used pineapple, banana, apple, pear, kiwi), previously sprinkled with and drained of lemon juice. Distribute the fruit evenly throughout the batter, reserving some pieces to decorate the surface.

  • Butter and lightly flour a rectangular pan of about 8×11 inches (or line it with parchment paper). Pour the batter into the pan and level the surface with a spatula.

    Arrange the reserved fruit pieces on top of the cake, pressing them gently into the batter. Sprinkle with a light layer of granulated sugar.

  • Bake in a preheated oven at 338°F for about 45-50 minutes. Remove from the oven and let cool completely. Cut the mixed fruit cake into 16 even squares, dust with powdered sugar if desired, and serve.
