SPOON DESSERT WITH COFFEE CREAM

The spoon dessert with coffee cream is an easy, quick and truly indulgent glass dessert. Perfect to prepare also with leftover cake, sponge cake, pandoro or panettone, it’s a clever idea to serve a very creamy dessert without too much effort. The coffee diplomat cream is velvety and delicate and is prepared in a few minutes. Once assembled, let the dessert rest in the refrigerator so it can be served well chilled at the right time. Ingredients

  • 3 egg yolks
  • 1 2/3 cups cups milk
  • 6 tbsp + 1 tsp granulated sugar
  • 1/3 cup + 1 tbsp all-purpose flour
  • 2 tbsp instant coffee
  • 3/4 cup + 1 tbsp heavy cream (whipping cream)
  • 5.3 oz chocolate sponge cake (Pan di Spagna)
  • 3.4 fl oz espresso coffee (for soaking the sponge)

Preparation

  • Place the milk in a small saucepan and bring it just to a simmer, then add the instant coffee and stir until it is completely dissolved.

  • In another pan combine the egg yolks with the sugar and whisk until you obtain a pale mixture. Add the sifted flour and mix to obtain a smooth cream without lumps.

  • Pour a little at a time the coffee milk into the mixture, continuing to whisk. Place the pan over the heat and cook the cream, stirring until it thickens.

  • Let the cream cool completely and cover it with plastic wrap, pressing the wrap directly onto the surface. In the meantime, whip the cream until stiff peaks form.

  • When the cream is cold, gently fold in the whipped cream with a spatula. Prepare the glasses or dessert cups; if you like, you can also decorate the inside with streaks of hazelnut spread.

  • Cut the sponge cake into pieces, lightly soak them with the espresso, and form the first layer in the glass. Add a layer of coffee diplomat cream and continue alternating cake and cream until you reach the rim of the glass.

  • Decorate the surface as desired and keep refrigerated until serving. Remove from the fridge about 10 minutes before bringing to the table.
