Ingredients
- 3 eggs
- 3/4 cup granulated sugar
- 1 3/4 cups all-purpose flour
- 1/2 cup natural yogurt (about 125 g)
- 1/2 cup neutral-flavored vegetable oil (about 125 ml)
- 1/2 cup finely chopped almonds (about 50 g)
- 2 tsp baking powder
- a pinch of salt
- grated zest of one lemon
- 1 1/3 cups fresh strawberries
Steps
In a large bowl, beat the eggs with the sugar and a pinch of salt until the mixture is pale and frothy.
Add the yogurt, the vegetable oil, the grated lemon zest and mix well until you obtain a homogeneous batter.
Gradually add the sifted flour with the baking powder and stir in the finely chopped almonds. Lightly flour the chopped strawberries and gently fold them into the batter.
Preheat the oven to 356°F and line a muffin tin with paper liners or grease and flour it. Divide the batter among the liners, filling them about 2/3 full.
Bake at 338°F for about 30 minutes, depending on the size of your muffins and your oven. To check for doneness, insert a toothpick into the center of a muffin: if it comes out clean, they are ready.
Remove from the oven and let cool completely. The strawberry and yogurt muffins are ready to be served!
