The sweet cauliflower fritters are an ancient and surprising preparation that will amaze you at first bite. Cauliflower, an unusual ingredient in desserts, becomes the protagonist of a soft and fragrant batter that, once fried, gives fritters with a creamy inside and a pleasantly crunchy outside. The preparation is simple and quick, requires no rising time and is perfect to personalize with extracts, citrus zests, liqueurs or dried fruit like raisins. Ingredients
- 14 oz cauliflower
- 1 cup all-purpose flour
- 1 whole egg
- 1 egg yolk
- vanilla extract
- 2 tsp baking powder (for sweets)
- 1 tsp sugar (+ as needed for coating)
- grated zest of 1/2 lemon
- grated zest of 1/2 orange
- as needed vegetable oil (for frying)
Steps
Clean and wash the cauliflower thoroughly, separate the florets and cook them in plenty of lightly salted water for about 10 minutes, adjusting the time according to the size of the florets.
Drain the cauliflower, transfer it to a large bowl and roughly mash it with the tines of a fork until you obtain a soft consistency.
Add the whole egg, the yolk, the sugar, the grated lemon and orange zests and the vanilla extract, then start mixing carefully.
Add the sifted flour and baking powder, combine everything until you obtain a homogeneous, soft mixture with a consistency similar to a thick batter.
Heat plenty of vegetable oil in a deep-sided pan and, once hot, take small portions of the batter with the help of two spoons.
Fry the fritters a few at a time, turning them gently during cooking until they are evenly golden.
Drain the fritters and place them on a tray lined with absorbent paper to remove excess oil. Roll the sweet cauliflower fritters while still hot in sugar (or honey) and serve immediately.
