Ingredients
- 3 eggs
- 2/3 cup granulated sugar
- 1/2 cup yogurt
- 2 cups all-purpose flour
- 7 tablespoons vegetable oil
- 1 packet (≈4 tsp) baking powder
- grated zest of 1/2 orange and 1/2 lemon
- a pinch of cinnamon (optional)
- a pinch of salt
- 1 1/4 cups peaches in syrup, drained
- to taste brown sugar
Steps
Drain the peaches in syrup and cut part of them into thin slices and part into smaller dice to add directly to the cake batter.
Spread the brown sugar on the bottom of a 9.5-inch pan (the one I used is heart-shaped) lined with parchment paper and arrange the peach slices, still slightly moist, on top.
Prepare the batter. In a large bowl, beat the eggs with the sugar and a pinch of salt until the mixture is light and frothy. Add the yogurt and the oil, mixing well.
Sift the flour and baking powder over the mixture, add the grated orange and lemon zest and a pinch of ground cinnamon (optional), then fold in the diced peaches gently with a spatula.
Pour the batter over the peaches already arranged in the pan and spread it evenly. Bake the cake in a preheated oven at 356°F for about 35 minutes.
To check for doneness, insert a toothpick into the center: if it comes out clean and dry, the cake is ready. If needed, extend the baking time by a few minutes. If the top darkens too much, cover it with a sheet of aluminum foil.
Once baked, let it cool, then gently invert it onto a serving plate.
