Its preparation is simple and quick: a soft yogurt-based batter without butter, enriched with pieces of fresh or canned peaches, which are placed on the bottom of a buttered and sugared pan before pouring the batter over them. Once baked, the loaf is inverted so the peaches are evenly distributed on the surface. The result is a moist, citrusy and slightly caramelized cake, ideal to enjoy also served with a scoop of vanilla ice cream, pastry cream or simply whipped cream. Ingredients
- 2 eggs
- 1 cup confectioners' sugar
- grated zest of 1 lemon and 1 orange
- a pinch of salt
- 1/2 cup yogurt (plain or fruit-flavored)
- 1/3 cup vegetable oil
- 1 1/4 cup all-purpose flour
- 1.76 oz frumina (wheat starch)
- 2 tsp baking powder
- 1 cup canned peach slices (drained)
- to taste brown sugar
Steps
In a bowl, beat the eggs with the confectioners’ sugar and a pinch of salt until light and frothy.
Add the grated lemon and orange zest, the yogurt and the vegetable oil in a thin stream, mixing well.
Gradually incorporate the sifted all-purpose flour together with the frumina (wheat starch) and the baking powder, folding gently with a spatula.
Butter a 12-inch loaf pan (30 cm), sprinkle a layer of brown sugar on the bottom. Arrange the peach slices over the sugar evenly on the bottom of the pan. Pour all the loaf batter over the peaches and level with a spatula.
Bake in a preheated oven at 356°F for about 25-30 minutes, or until evenly golden.
Once baked, let cool completely, then invert the pan onto a serving platter and unmold the loaf. If desired, glaze the surface with a light brush of peach jam previously warmed in a small saucepan.
