7-Strand Sweet Brioche Braid

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 2/3 cups Manitoba flour
  • 1/2 oz fresh yeast
  • 3/4 cup whole milk
  • 2 eggs (medium)
  • 1/2 cup sugar
  • 2/3 cup butter
  • 1 egg yolk (for brushing)

Steps

  • In a stand mixer, or if you prefer, you can also work the mixture manually in a bowl, pour the flour

  • Add the yeast

  • In a pitcher, combine the milk and eggs. Mix well with a spoon

  • Pour it into the flour

  • Start working with the stand mixer or by hand as you prefer.

  • When the flour has been absorbed by the liquids, add the sugar

  • the butter, one piece at a time.

  • Work until you obtain a smooth and homogeneous mixture.

  • Cover with plastic wrap and let it double for 3 hours.

  • We will find it more than doubled.

  • Form seven ropes

  • with a rolling pin, join the ends

  • Brush with egg yolk. Bake in a preheated traditional oven at 356°F for 30 minutes
