Ingredients
- 12 oz spinach, frozen
- 4 eggs (medium)
- to taste salt
- 1 pinch pepper
- 3 tbsps Grana Padano DOP
- 1 tbsp potato starch
- to taste parsley
- 3.5 oz cooked ham
- 7 oz robiola
Tools
- Plastic Wrap
- Parchment Paper
- 1 Baking Sheet
Steps
Boil the frozen spinach in plenty of water.
Cook the spinach for about 10 minutes
Pass the spinach in cold water to maintain the bright color.
Drain the spinach well
and squeeze them well.
Put the spinach in a tall container.
Add the eggs and the parsley.
The salt and pepper.
The grana.
The potato starch
Blend until creamy with an immersion blender
Pour the mixture onto a baking tray lined with parchment paper.
Spread the mixture into a rectangle no thicker than 0.4 inches. Bake in the oven at 350°F for about 15 minutes
Place the cooked rectangle on a surface covered with plastic wrap
Cover the rectangle with parchment paper
Roll it up and let the roll cool in the fridge.
At this point, open the roll again and spread the robiola,
and the slices of cooked ham.
Roll it back up and let it rest in the fridge for another hour.
Now cut into slices and serve our Baked Spinach and Robiola Roll
