Ingredients

  • 1 2/3 cups all-purpose flour
  • 1/3 cup potato starch
  • 1/3 cup unsweetened cocoa powder
  • 1 packet baking powder
  • 5 eggs (medium whole)
  • 2 egg yolks
  • 1 cup + 2 tbsp cups sugar
  • 1/2 cup sunflower oil
  • 1/2 cup dark chocolate chips
  • 1 pinch salt
  • 2/3 cup all-purpose flour
  • 1/4 cup muscovado sugar
  • 1/4 cup butter (softened)
  • 1 tbsp orange (orange paste. If you don't have the paste, use some grated orange peel)

  • 1 Stand Mixer
  • 1 Spatula
  • 1 Bundt Pan

Steps

  • Let’s start by preparing the crumble. In a bowl, add the flour

  • the muscovado sugar

  • the pinch of salt

  • the softened butter cut into pieces.

  • Work with your hands until you get a powdery mixture

  • Add the tablespoon of orange paste. You can find the recipe for orange paste among the ingredients. If you don’t have it, you can safely substitute it with grated organic orange peel.

  • Cover and leave in the fridge.

  • Now prepare the chocolate cake batter. In a stand mixer, if you don’t have a stand mixer, you can easily use electric beaters, add the eggs and yolks.

  • Add the sugar.

  • Mix until doubled

  • With the stand mixer running, gradually add the sunflower oil.

  • In a bowl, combine the sifted powders, i.e., the flour, potato starch, cocoa, and baking powder.

  • Using a spatula, gradually incorporate the powders with movements from the bottom up to prevent deflating the mixture

  • At this point, add the chocolate chips.

  • Pour the mixture into a 9.5-inch bundt pan

  • Add the crumble on top and bake in a static oven at 347°F for 40 minutes.
